Halloween Recipe ~ Irish Griddle Cakes

The history of pancakes can be traced back to over 30,000 years ago, during the stone age! The ancient Greeks and Romans truly enjoyed their pancakes, which have also been connected to Africa, Asia, Europe, the Americas — all over the world! Pancakes are not only tasty, but connect us with all cultures from the beginning of time!

The Irish are certainly not the only ones to experience the delight of pancakes, but here I have a specific recipe known as “Irish Griddle Cakes.” I chose this one in particular because for the Irish, a Catholic nation, they take Halloween very religiously and have a tradition of making these pancakes on All Soul’s Day. These are super THICK!

I first made this recipe two years ago, so I’m excited to try it again! Last year, I accidentally bought “safflower oil” instead of “sunflower oil,” whoops! Also, don’t ask me why I have so much baking soda!

Ingredients:

  • 2 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup whole milk yogurt
  • sunflower oil

Directions:

  • Mix ingredients together in a bowl until a doughy texture forms.
  • Put your frying pan on medium heat and add sunflower oil.
  • Use your hands to knead a ball of dough, place on frying pan, and flatten with spatula.
  • Flip pancakes until reached a light to golden brown.
  • Add desired toppings — syrup, butter, fruit, etc.

I like my pancakes on the light side, but feel free to cook them as long as needed. For my topping, I used apple butter, which I highly recommend! t was extremely delicious and filling!

    Yum, I love pancakes! And I see you buy the same size of baking soda as me. 😅 It’s so useful to have around the house! I use it more for cleaning and freshening than for baking, honestly.

      Hahaha okay, now I can admit I also bought it for cleaning purposes, well mainly because I heard that bugs hate baking soda, so I was like, I NEED ALL THE BAKING SODA!!! Hahaha!!! Thank goodness I haven’t had to use as much as I thought I needed.
